Crispy Tater Tot Potato Salad

We’ve been seeing crispy potato salads going viral on social media, and rightfully so! The creamy sauce pairs perfectly with crunchy potato for the ultimate comfort salad. 

Here’s our take on this popular salad with tater tots (AKA potato gems for Australians) and it’s now a staple in our kitchen, especially for BBQs!

Ingredients

500g potato gems/tater tots

3 pieces bacon

1 cup sour cream

1/4 cup kewpie mayo

Bunch of chives 

Bunch of dill

1/2 cup dill pickles

1 tbsp wholegrain mustard

2 tbsp Pickle juice 

1/3 cup pickled onion (you can use fresh, it will just be more pungent)

Salt and pepper to taste 

Method

  1. Preheat oven to 200°C and bake potato gems for 10 mins.

  2. Take the potato gems out of the oven and smash them flat - a glass works best for this.

  3. Pop the potato gems back into the oven for another 30 minutes, until they get nice and crispy. 

  4. Meanwhile, finely chop up the chives, dill, pickles, bacon and onion. Mix all the ingredients besides the potato gems in a serving bowl to make the sauce.

  5. Gently fold the potato gems into the sauce and serve immediately - if you leave for too long the potato will go soggy… but still taste delicious!
