Hey everyone! In today's video, we're doing some home cooking. We're making homemade Spicy Salmon on Crispy Rice.

Spicy Salmon on Crispy Rice Recipe - Inspired by Nobu

Basically, it's our take on the popular 'Spicy Tuna on Crispy Rice' dish from Nobu - we're switching it up with salmon instead of tuna for something a little different. This is a perfect dish to make as a snack, starter, or finger food for a party. It's super easy to put together and tastes great!

Ingredients

- small bunch of chives
- 200g sashimi grade salmon
- 1 cup uncooked sushi rice
- 2 tbsp sushi rice vinegar
- 1/2 tsp white sugar
- 3 tbsp kewpie mayonnaise
- 1 tsp of sesame oil
- 1 tsp soy sauce
- 1 tsp teriyaki sauce
- 1 tbsp gochujang (or any other chilli sauce/paste)
- 1/2 tsp lime juice
- vegetable oil for frying
- salt and pepper to taste

Recipe

1. Wash 1 cup of rice, then add 2 cups of boiling water then microwave on high for 12 mins (we always microwave our rice, but you can cook on the stove or in a rice cooker if you prefer).
2. Let the rice sit for 5 mins, then mix in sushi vinegar and of sugar.
3. Spread the rice on a plate and let it cool in the freezer for 30 mins.
4. While the rice is cooling , mince the chives, and add to a small mixing bowl.
5. Add kewpie mayo to the bowl, along with sesame oil, soy sauce, teriyaki sauce, gochujang and lime juice to the bowl. Season with salt and pepper, then mix until combined. You may find you need to change the measurements of the sauces to your liking!
6. Dice the salmon into small cubes, then fold the salmon into the mayo mixture. Set aside in the fridge until serving time.
7. Once the rice has cooled, remove from the freezer and cut the rice into rectangles.
8. Fry the rice rectangles in some vegetable oil, flipping until they are golden brown on both sides.
9. Remove rice from the pan, top with the salmon mixture and enjoy!
