Chololo, Fairfield - Review

Update 2022: Chololo has closed their Fairfield location, but remains open in Hurlstone Park and Newtown.

If there was ever a viral trend we could get behind, it’s birria tacos! Lucky for Sydneysiders, the team behind Chololo have recently opened a brick-and-mortar store, and there’s only one thing they’re known for - their delicious birria tacos.

Situated in a no-frills food court in bustling Fairfield, this newly-opened taco joint has people lining up from all over Sydney to live out their Mexican food fantasies. Chololo have capitalised on the popularity of this must-try taco trend, and we aren’t mad about it all! What started as a social media side-hustle, selling tacos on instagram, has transitioned into this store to keep up with demand.

For foodies out there that have been living under a rock, birria tacos are made with tender meat slow-cooked in a rich spicy broth. Tortillas are then dipped into the broth, filled with the shredded meat, cheese and onion, and fried to crispy perfection on a griddle.

The main attraction here at Chololo is their birria tacos packs - 3 freshly grilled tacos with a little pot of rich dipping sauce. We loved watching the team preparing these tacos hot and fresh on the grill in front of customers. They’ve got a few other options on the menu, like creamy elotes corn cobs and ‘ramen’ birria, and there’s the option for vegetarian tacos as well.

The tacos here are full of cheesy, crispy goodness and packed flavour, albeit a bit greasy. The dipping broth definitely gives the tacos an extra kick of spice. They’re not quite as authentic as birria tacos we’ve had in Mexico, but they’re pretty darn close.

Only thing we’d like to make note of from our visit to Chololo was consistency, or lack of. The tacos were delicious, but the one of our packs was more crispy/burnt than the other, and the ratio of ingredients in each of our tacos was completely different. We’re putting this down to the establishment being new though, and still working out the kinks.

Overall, we’d line up again (with an empty stomach) for these birria bad boys. Pop Chololo on your list of tacos to try in Sydney!
